Apple Gazpacho
I served this in crystal cordial glasses with little demitasse spoons at the tea we hosted for the National Cathedral congregation.
2 Granny Smith apples, peeled, cored, and chopped
1 seedless cucumber, peeled and chopped
1 handful cilantro, chopped
1 shallot, chopped
Juice of 1 lime
Puree in Cuisinart. Serve chilled.
